  1. To prepare the Avocado Toast, cut an avocado in half, remove the pit, and scoop out the flesh with a spoon. Place the avocado flesh in a tall container, add a drizzle of olive oil, a pinch of salt, some chopped chives, and a few drops of lemon juice. Blend everything until you get a smooth cream and set aside.
  2. Hard boil the eggs and toast the bread (either in the oven or in a toaster). Take the second avocado, cut it in half, peel it, and cut it into small pieces using a knife. Place the pieces in a bowl and season lightly with salt, mixing gently.
  3. Take your avocado cream and spread it on all the toasted bread slices. On some slices, arrange smoked salmon, some sprouts, and freshly ground black pepper. On other slices, place some sliced hard-boiled eggs, avocado pieces, chopped chives or parsley, and sprinkle with poppy seeds. Tips

Storage

Avocado Toast should be eaten immediately, storage is not recommended as the avocado will oxidize and turn brown.
