To prepare Baked Falafel, start by soaking the chickpeas for twelve hours. After the soaking time, drain them, rinse well and place them in a food processor.
Add parsley, cumin, salt, garlic, half an onion, and pepper, then blend everything well until you get a slightly grainy mixture.
Once you have the mixture, place it in a bowl, cover with plastic wrap, and let it rest in the refrigerator for 1-2 hours.
After the mixture has firmed up, shape the Falafel using your hands, giving them a slightly flattened form. Place them on a baking sheet lined with parchment paper and bake in the oven at 180°C (350°F) for about 20-30 minutes.
Turn them during cooking, and once well cooked, remove them from the oven and serve your Baked Falafel while still hot, although they can also be enjoyed at room temperature.
