  1. To prepare the Baked Spaghetti Nests, if you’re recycling leftover spaghetti from lunch, skip this step and go directly to step three. Start by preparing the tomato sauce: dice the onion and sauté it with the garlic clove in a pan with some olive oil until golden. Season with salt, pepper, and add a pinch of sugar (this will help balance the tomato’s acidity). Cook over low heat for 20 minutes, stirring occasionally, adding 2-3 torn basil leaves halfway through cooking.
  2. Cook the spaghetti in plenty of salted water. Drain them al dente, 2-3 minutes before the package instructions indicate. Transfer them to the pan with the sauce, finish cooking, sprinkle with abundant grated Parmesan cheese, and mix everything well.
  3. Using kitchen tongs, twirl a portion of spaghetti around a ladle to form a nest shape. Carefully place it in a previously oiled or buttered muffin tin and continue until you’ve used all the spaghetti.
  4. Once you’ve formed all your Spaghetti Nests, hide a cube of scamorza cheese (Italian smoked mozzarella) in the center of each nest. Bake in a preheated oven at 200°C (392°F) for 15-20 minutes, then finish with 5-10 minutes under the grill until golden brown and crispy.

Variations and Alternatives

You can substitute the Scamorza cheese with Smoked Provolone or Pizza Mozzarella (low-moisture mozzarella).

Tips

If you use leftover cold pasta, it will be easier to shape your Spaghetti nests, but you might need a few extra minutes of baking time in the oven.

Storage
