  1. To prepare Bread Gnocchi (Gnocchi di Pane), start by cutting the bread crumb into small pieces – there’s no need to be too precise with the size.
  2. Transfer the bread crumbs to a bowl and cover them with slightly warmed milk. Cover the bowl and let it rest for one hour to allow the bread to fully absorb the milk.
  3. Add the egg, flour, and grated cheese, mixing first with a fork and then by hand until you obtain a compact and uniform dough. Season the mixture with nutmeg and adjust the salt to taste.
  4. Transfer the dough to a floured work surface and divide it into portions. Roll each portion with your hands to form cylinders about 1 centimeter (approximately 0.4 inches) in diameter.
  5. Using a knife, cut the cylinders into small pieces to form the gnocchi.
  6. Cook the gnocchi in plenty of salted boiling water. Gently remove them with a slotted spoon as soon as they float to the surface, which indicates they are cooked.
