  1. To prepare Cheesy Crash Hot Potatoes, start by thoroughly washing the potatoes. Cook them in plenty of boiling water for about 20 minutes, or until they are well cooked through.
  2. Take a baking tray, line it with parchment paper and drizzle some extra virgin olive oil on the paper. When the potatoes are ready, drain them and arrange them on the tray, making sure to leave enough space between each potato.
  3. Flatten each potato using a fork or, even better, a potato masher. Brush with extra virgin olive oil, sprinkle with pepper and add a pinch of salt.
  4. Using a coarse grater, grate the Parmigiano Reggiano cheese (aged Italian parmesan) and sprinkle it over the potatoes. Bake in a preheated oven at 250°C (482°F) for about 20-25 minutes, placing the tray on the upper rack of the oven.
