Carefully brush both sides of the chicken slices with olive oil, lightly salt them, and coat them thoroughly in a mixture of breadcrumbs and Parmigiano cheese.

  2. Place the breaded chicken cutlets in a non-stick baking pan (or one lined with parchment paper), drizzle with some olive oil, and bake in a preheated oven at 180°C (356°F) for 15-20 minutes.

Grate the Scamorza cheese using a large-hole grater. When the cutlets are golden and cooked through, spread a layer of sauce and some grated Scamorza on top, then return to the oven for another 10 minutes or until the cheese is completely melted.
