To prepare the Chicken Breast with Mushrooms, start by finely chopping the onion and then sautéing it inside a pan with a drizzle of evo oil, a clove of garlic and a knob of butter until golden brown. Meanwhile, flour the chicken slices in a dish containing flour and, after washing and cleaning the mushrooms, slice them.
When the onion is golden brown, add the mushrooms to the pan, season with salt and pepper, deglaze with white wine, cover with a lid and cook for 10-15 minutes.
Add the floured chicken breast slices, season with salt, deglaze with more white wine, cover, and cook for another 15-20 minutes.
When the cooking is finished, sprinkle with chopped parsley and turn off the stove. Plate your Chicken Breasts with Mushrooms by pouring the cooking sauce as a base and placing the chicken slices on top. Serve them all still piping hot at the table.
