  1. To prepare the Cream of Broccoli Soup, start by washing the leeks, potatoes and broccoli. Take the leeks and slice them into thin rounds, then peel the potatoes and cut them into small cubes. Finally, take the broccoli, remove the stems and separate the florets.
  2. In a large pot, cook the butter and leeks over low heat for about 10-15 minutes. Add the potatoes and broccoli and cook for a few minutes while stirring. Pour in the hot broth, add salt and pepper, and continue cooking on low heat for another 30 minutes.
  3. Using kitchen tongs, remove some broccoli florets and set them aside for garnishing. With an immersion blender, blend everything until you get a smooth and creamy consistency, then add salt and chopped fresh thyme and continue cooking. Pour into serving bowls, garnish with the reserved florets and serve your Cream of Broccoli Soup. Finally, remember to download our App with exclusive content and fewer ads!

Variations and Alternatives

You can enhance your Broccoli Cream Soup by drizzling some Extra Virgin Olive Oil on top just before serving, or by adding a splash of fresh heavy cream for extra richness.

Tips

I recommend serving the Broccoli Cream Soup with crispy bread croutons for added texture and flavor.

You can store the Broccoli Cream Soup in an airtight container in the refrigerator for up to one day. If you’ve used only fresh ingredients, you can also freeze it for later use.
