  1. To prepare Crispy Baked Zucchini, first wash, dry and trim the zucchini, then cut them lengthwise into thick slices, and cut each slice into sticks. Meanwhile, preheat the oven to 200°C (392°F).
  2. In a bowl, mix together flour, breadcrumbs, Parmigiano cheese, a pinch of salt and pepper. Add the zucchini sticks to the bowl and toss them until they are well coated with the breading mixture.
  3. Arrange the zucchini sticks on a baking sheet lined with parchment paper, making sure they don’t overlap, and drizzle them evenly with extra virgin olive oil. Variations and Alternatives
