  1. To prepare Fried Zucchini Blossoms, take a large bowl and mix together both flours and salt. Gradually add the very cold sparkling water while whisking continuously. If the batter appears too thick, add a little more water; if it’s too thin, increase the amount of rice flour.
  2. Clean the zucchini blossoms, dip them one at a time in the batter, and immediately place them in a pot with plenty of hot frying oil.
  3. After a few minutes, when they have reached a golden color, remove them with a slotted spoon and place them on a tray lined with paper towels to remove excess oil. Variations and Alternatives
