  1. To prepare the Easter Pine Cake (Pigna di Pasqua), break the eggs into a large bowl, add sugar and whisk until you obtain a fluffy, foamy mixture.
  2. Add lemon zest and juice, vanilla bean seeds and water, mixing to combine. Pour vegetable oil, Vermouth and Strega liqueur (a traditional Italian herbal liqueur) into the mixture, stirring to incorporate all ingredients.
  3. Gradually add all-purpose flour, Manitoba flour (high-protein bread flour) and baking powder, gently mixing with a whisk until you obtain a smooth, homogeneous batter.
  4. Grease a bundt cake pan and pour in the batter, leveling the surface. Bake in a preheated oven at 180°C (356°F) for about one hour, then remove from the oven and let it cool completely on a cooling rack.
  5. While the cake is cooling, prepare the glaze for decoration. In a medium bowl, combine egg white with powdered sugar, whisking vigorously until you obtain a smooth and uniform cream.
