Click here and GET IT FREETo prepare the Vegetarian Fusilli, start by cooking the fusilli pasta in plenty of salted water, making sure to drain them while still al dente (firm to the bite).Meanwhile, clean the mushrooms. Use a mushroom brush or knife to remove any soil residue and wipe them clean with a kitchen cloth.Pour extra virgin olive oil into a large non-stick pan and cook the garlic and finely chopped chili pepper for about one minute.Add the sliced mushrooms, turn the heat to high and sauté for about 2 minutes. Season with salt and continue cooking for another couple of minutes.Meanwhile, wash, trim and dice the zucchini and cherry tomatoes. Add them to the pan and cook for about 8-10 minutes, stirring occasionally.Rinse the capers thoroughly and add them to the pan along with a couple of tablespoons of pasta cooking water.Drain the fusilli while still al dente and add them to the pan with the vegetables.
