In the Four Cheese Pasta, as I previously explained in the Salmon version, the traditional cheeses used are Emmental, Parmigiano Reggiano, Taleggio (a semi-soft Italian cheese with a mild flavor that can be substituted with Brie or Fontina), and Gorgonzola (Italian blue cheese). If you’re not a fan of Gorgonzola, you can prepare a Four Cheese Pasta without Gorgonzola by replacing it with a mild semi-soft cheese like Havarti or mild Cheddar.I love Four Cheese Pasta because it’s a perfect recipe for using up leftover ingredients! Then add the grated Parmigiano-Reggiano and Emmental cheese, while the Gorgonzola and Taleggio should be cut into small cubes. Mix everything well with a wooden spoon until the cheeses melt, then adjust with salt and add black pepper.Put the cheese sauce in a non-stick pan and drain the pasta. Add the pasta to the pan with the sauce and toss for a few minutes. Serve the Four Cheese Pasta with some grated Parmigiano-Reggiano on top.
