  1. To prepare Garlic Artichokes (Carciofi all’Aglio), first clean the artichokes: trim the stems, remove the outer leaves, cut the remaining leaves in half and remove any thorns. Then cut each artichoke into quarters, remove the fuzzy choke from inside each piece, and cut each quarter into smaller pieces according to your preference.
  2. Once you’ve finished cleaning and cutting the artichokes, place them in a bowl with water and lemon juice to prevent oxidation during preparation. In a pan, sauté the extra virgin olive oil and garlic for a couple of minutes until golden. Then add the drained artichokes and lemon slices, stir-fry them, and season with salt and pepper to taste.
  3. Add ladlefuls of vegetable broth to the pan and continue cooking over medium heat until the artichokes begin to soften. Season again with salt and pepper to taste, and continue cooking, adding more broth if necessary. Once ready, serve your Garlic Artichokes while still hot.
