This Vegetarian Recipe is also perfect if you have guests following a meat-free diet, and you can be sure they’ll love it.

The Green Pea Fritters Recipe follows the same basic principle as all similar fritters: prepare a batter with Milk, Eggs, and Flour, add Green Peas (some whole and some pureed), and fry in a moderate amount of oil. Adding Spring Onions (scallions) to the mixture will make this dish even more flavorful.

  1. To prepare the Pea Fritters, start by removing the end part and the green part of the spring onion, then finely slice the white part.

  2. Transfer it to a pan with oil and the garlic clove, and let it sauté for a few minutes, being careful not to burn it and stirring occasionally.

  3. Add the peas and season with salt and pepper. Cook covered for 15-20 minutes until tender.

  4. Drain the peas using a colander and set aside the cooking liquid.

  5. Blend half of the peas using an immersion blender, adding some of the reserved cooking liquid to help create a smooth puree.

  6. Beat the egg with milk and Greek yogurt, then add flour, Parmigiano cheese, a pinch of salt, and the pea puree.

  7. Finely chop the chives and add them to the mixture along with the whole peas, giving everything a quick final stir.

  8. Heat about an inch of vegetable oil in a pan for frying. When it reaches 180°C (356°F), drop small portions of the batter using two spoons.

  9. Fry the Pea Fritters for two minutes on each side, then remove them with a slotted spoon and place them on paper towels to drain excess oil.

Alternatives

The Pea Fritters recipe can also be made with frozen peas. The quantity and cooking procedure remain the same.

We recommend preparing and serving Pea Fritters immediately: like all fried foods, they tend to lose their best qualities when left to cool.

Storage
