Click here and GET IT FREETo prepare the Pea Fritters, start by removing the end part and the green part of the spring onion, then finely slice the white part.Transfer it to a pan with oil and the garlic clove, and let it sauté for a few minutes, being careful not to burn it and stirring occasionally.Add the peas and season with salt and pepper. Cook covered for 15-20 minutes until tender.Drain the peas using a colander and set aside the cooking liquid.Blend half of the peas using an immersion blender, adding some of the reserved cooking liquid to help create a smooth puree.Beat the egg with milk and Greek yogurt, then add flour, Parmigiano cheese, a pinch of salt, and the pea puree.Finely chop the chives and add them to the mixture along with the whole peas, giving everything a quick final stir.Heat about an inch of vegetable oil in a pan for frying.
