  1. To prepare Grilled Oysters, start by preparing a large bowl with ice and water. Take a serving tray and line it with either coarse salt or crushed ice.
  2. Take a kitchen towel and fold it lengthwise into thirds – this will help you handle the oysters safely. Clean the oysters thoroughly and place them in the bowl with ice water.
  3. Examine each oyster carefully: one side of the shell is flatter, while the other forms a curved belly. Position the belly side against the folded towel, with the flat side facing up.
  4. Cover the oyster with the kitchen towel, leaving only visible the area where the two shells meet. Insert the oyster knife into the hinge and apply gentle pressure to separate the shells.
  5. Clean the knife on the towel and cut the oyster’s adductor muscle to separate it from the top shell. At this point, the shells can be completely separated.
  6. Completely cut through the muscle and remove the top shell. Using the knife tip, carefully clean the oyster of any debris, removing any shell fragments that might have fallen in during the opening process.
  7. Once cleaned, place the oyster on the tray with salt (or crushed ice), being careful not to spill the natural oyster liquor contained in the shell. Repeat these steps until all oysters are cleaned and opened.
  8. Now proceed with making the flavored butter. Soften the butter, cut it into cubes, and place it in the mixer bowl.
  9. Add chopped parsley, lemon juice and zest, minced garlic, salt, and pepper. Run the mixer until you obtain a smooth and homogeneous cream.
  10. Place the oysters on the preheated grill, ensuring they remain perfectly horizontal. Fill each with a teaspoon of the flavored butter and cook for about 2 minutes.
