Note about licorice: In Italy, pure licorice is commonly available in powder or liquid form. Outside Italy, you can find pure licorice powder in specialty stores or online. If unavailable, you can use pure licorice extract, ensuring it’s natural and not artificially flavored. Avoid using candy licorice as it contains additional ingredients that would alter the recipe’s outcome.

  1. To prepare the Licorice Mousse (Spumone alla Liquirizia), start by combining the licorice powder, milk, and sugar in a saucepan.

  2. Place the pan over low heat and start stirring continuously until the licorice powder has completely dissolved. There’s no need to cook or bring to a boil; you can remove it from the heat as soon as the powder is dissolved.

  3. While the licorice milk mixture is cooling, whip the heavy cream until stiff peaks form. Once ready, gently fold the cooled licorice milk mixture into the whipped cream.

  4. Cover with plastic wrap and let it rest in the refrigerator for about an hour. After the resting time, remove from the refrigerator and serve your Licorice Cream Mousse!
