To prepare Italian Roast Pork Loin put in a large pan some olive oil, a clove of garlic, a sprig of rosemary, place the meat in it and brown it over a high flame, turning it from time to time to cook it evenly, until it reaches a nicely golden color. This step will allow you to seal the meat while keeping the juices inside.
Once browned, remove the loin with the oil, garlic and rosemary from the pan and place it all in an ovenproof dish previously greased with a little oil. Drizzle with a little bit of meat stock, season with salt and pepper to taste and bake at 360°F/400°F (180/200°C) for about 90 minutes. While cooking, turn occasionally and drizzle with the broth and a little white wine so as to keep the meat nice and moist and facilitate the creation of an excellent sauce.
Just before the cooking time is over, put small tufts of butter on the loin. After the 90 minutes have passed, take the Baked Pork Loin out of the oven, cut it into slices and serve it drizzled with its cooking juices and accompanied by some excellent polenta and tasty Baked Potatoes.
