When we talk about Jam Tart, we usually think of the classic Jam Crostata, but today we’ll explore a new and truly delicious way to make a soft, fragrant cake filled with a hidden layer of jam. Forget about the “effort” of making shortcrust pastry and get ready to create an easy and quick cake, perfect for breakfast and snack time.

Unlike the traditional crostata, for this Smart Jam Cake Recipe you just need to mix Flour, Eggs, Milk, Oil, and Sugar, pour half of the batter and proceed with a first baking. Then cover with your favorite Jam, creating an even layer, pour the remaining batter and complete the baking process.

  1. To prepare the Jam Cake, start by breaking the eggs into a bowl. Add sugar and beat with an electric mixer until you get a light and fluffy mixture.
  2. Gradually pour in first the oil and then the milk, while continuously mixing until they are completely incorporated.
  3. Finally, add the sifted flour with potato starch, baking powder, and vanilla flavoring. Be careful not to form any lumps during this phase.
  4. Line an 8-inch (20 cm) diameter cake pan with parchment paper and pour in half of the batter.
  5. Bake at 170°C (338°F) for 15 minutes, then remove from the oven and cover the entire surface with jam.
  6. Pour the remaining batter and continue baking for another 20-25 minutes. Before removing from the oven, perform the toothpick test: insert a toothpick in the center of the cake – it should come out completely clean. If not, continue baking for another 5 minutes and repeat the test.
