  1. To prepare the Leftover Boiled Meat Croquettes, start by finely chopping the boiled beef and placing it in a bowl. Break up the bread crumbs and soak them in a splash of milk.
  2. Peel the boiled potatoes, pass them through a potato ricer and add them to the bowl with the meat.
  3. Squeeze out the excess milk from the soaked bread and add it to the bowl. Add the chopped parsley, adjust the salt to taste and mix well to combine all ingredients.
  4. Take two medium-sized bowls: pour breadcrumbs in one and beat the eggs in the other.
  5. Take the meat mixture and form walnut-sized croquettes, dip them in the beaten egg and coat them with breadcrumbs. Continue until you’ve used all the mixture.
  6. Pour plenty of frying oil in a pan and heat it up. When the oil starts sizzling, add the croquettes, being careful to cook them in batches to maintain the oil temperature.
  7. When they’re golden brown, remove them from the pan using a slotted spoon and place them on a plate lined with kitchen paper to remove excess oil.
