  1. To prepare the Lentil Soup, start by washing the lentils and cook them in a pan with water for 30 minutes. Peel the garlic and chop it using a mezzaluna knife (a curved blade knife traditionally used in Italian cooking), then slice the tomatoes and add everything to the pot with the lentils.
  2. Add oregano to the pot and mix everything together so that the flavors and ingredients blend perfectly. Once the tomatoes are well broken down and the broth has achieved a uniform color, add salt to taste and remove the pot from the heat.
  3. Cover the pot with a lid and leave it on the stove for about ten minutes to allow the flavors to develop. Variations and Alternatives

To give the Lentil Soup an even more distinctive taste and make it more flavorful, you can add a pinch of paprika.

Tips

I recommend using all fresh ingredients, but if you don’t have them available, you can easily substitute fresh tomatoes with chopped canned tomatoes and use either canned or dried lentils instead of fresh ones.

Storage

I recommend eating the Lentil Soup immediately, but if you have leftovers, you can store them in an airtight container in the refrigerator for a couple of days. If you’ve used only fresh ingredients, you can also freeze it.
