  1. To prepare Mezze Maniche (tube-shaped pasta) with Cream, Speck and Zucchini, start by cutting the speck (a type of cured ham from Northern Italy) into strips. Wash and trim the zucchini, then julienne them using a large-hole grater.
  2. Heat the oil in a non-stick pan, then sauté the speck for a few minutes. Add the zucchini and continue cooking.
  3. Meanwhile, cook the mezze maniche in plenty of lightly salted water, making sure to drain them while still al dente (tender but firm to the bite).
  4. Pour the cream into the pan, add a splash of pasta cooking water and stir to combine. Drain the pasta and transfer it directly to the pan with the sauce.
  5. Adjust the salt, sprinkle with pepper and stir in the grated Parmesan cheese until creamy (this process is called ‘mantecare’ in Italian). Once all ingredients are cooked, serve the Mezze Maniche with Cream, Speck and Zucchini! Finally, remember to download our App with exclusive content and fewer ads!

Variations and Alternatives

If you don’t like Speck, you can substitute it with bacon, cooked ham, or prosciutto.

If you prefer not to use heavy cream, you can replace it with cream cheese like Philadelphia.

For an extra touch of flavor and color, you can enrich this dish by adding saffron.

Tips

For the best results when making Mezze Maniche with Cream, Speck and Zucchini, we recommend buying a thick slice of Speck (a type of cured, lightly smoked ham from Northern Italy) and cutting it into strips yourself.
