  1. To prepare the Mud Cake, start by finely chopping the dark chocolate.
  2. Melt it in a double boiler, then add the butter cut into small pieces.
  3. Finally, once you have a creamy mixture, add the vanilla extract and instant coffee for flavoring.
  4. Transfer everything to a glass bowl or to the bowl of a stand mixer fitted with the whisk attachment. Once the mixture has cooled slightly, add the sugar and the eggs (previously beaten with a fork).
  5. Using either an electric hand mixer or a stand mixer, gradually pour in the buttermilk in a steady stream.
  6. Finally, add the sifted flour with cocoa powder and baking powder, folding it in with a spatula using an upward motion to maintain airiness.
  7. Pour the batter into a 22 cm (9-inch) cake pan lined with parchment paper and bake at 160°C (320°F) for one hour. Before removing from the oven, perform the toothpick test: when inserted in the center, it should come out clean. If not, continue baking for another 5 minutes and test again.
  8. Once ready, remove from the oven and let it cool completely before removing from the pan.
  9. Meanwhile, heat the heavy cream until it almost reaches boiling point.
  10. Turn off the heat, add the chopped chocolate and stir well until completely melted.
  11. Pour the chocolate ganache into a container and refrigerate until it reaches a thick consistency.
