  1. To prepare the New York Cheesecake, start with the base. Break the cookies into pieces with your hands, then process them in a food processor until you get a sandy texture. Add the melted butter and mix well.
  2. Line a 9-inch (22 cm) springform pan with parchment paper. Pour in the cookie mixture and, using a spoon, form the cheesecake crust, starting from the bottom and working your way up the sides, ensuring an even thickness of about 1/4 inch (half centimeter). Refrigerate for 30 minutes.
  3. Meanwhile, prepare the filling: in a bowl, use an electric mixer or stand mixer to blend the cream cheese, yogurt, sugar, and vanilla bean seeds until smooth and well combined.
  4. Gradually add the eggs while continuing to mix, then add the heavy cream, and finally the sifted cornstarch. Pour the filling into the chilled crust and bake at 160°C (320°F) for 1 hour on the lower rack of the oven.
  5. While the cake is baking, prepare the topping by whisking together sour cream, sugar, and vanilla bean seeds in a bowl until well combined. After the first hour of baking, remove the cheesecake from the oven, spread the sour cream mixture on top, and return it to the oven at 160°C (320°F) for another 10 minutes.
