  1. To prepare Mezze Maniche (rigatoni pasta) with Bell Pepper Sauce, start by washing the bell peppers. Cut them in half, remove the stem and seeds, then slice them into strips. Peel and finely chop the onion.
  2. Pour extra virgin olive oil into a large non-stick pan and sauté the onion for about 5 minutes. Add the bell peppers and cook them over high heat for about 5 minutes.
  3. Lower the heat to minimum, add the tomato sauce to the pan, adjust salt to taste and continue cooking for another 10 minutes, stirring occasionally.
  4. Meanwhile, cook the pasta in plenty of lightly salted boiling water until al dente (firm to the bite).
