Yes you can use bread to do what we call “fare la scarpetta” (using a crusty bread to mop up the flavorful sauce) but that’s all: do not add parmesan, bell peppers, nor other strange sauces.

  1. To prepare Chicken Pizzaiola, start by cooking a drizzle of extra virgin olive oil in a large nonstick skillet. Once hot, add the chicken breast, adjust the salt, sprinkle with pepper, and brown the chicken on both sides.

  2. When the chicken is cooked transfer it to a plate, cover it with aluminum food wrap and keep it warm until it is time to use it.

  3. In the pan you have cooked the chicken pour another drizzle of oil and brown the garlic. When it is nicely browned, pour in the Tomato Puree, adjust the salt, add the oregano and cook for about 5 minutes.

  4. Chop the mozzarella and add it to the pan, stirring so that it melts. Also add the chicken slices and continue cooking for another 15 minutes, turning the chicken occasionally.

  5. After this time has passed, turn off the heat and immediately serve the Chicken Pizzaiola piping hot!
