The recipe is almost the same, although the savory version belongs to the Lombard culinary tradition, while the sweet version is famous worldwide: in Greece, this sweet rice cream is known as Rizogalo, in the United Kingdom it’s the famous Rice Pudding, in Spain it’s called Arroz con Leche, and in France it’s Riz au Lait.

Both recipes can be considered grandmother’s recipes, as homemade Rice Pudding has always been a humble, nutritious, and healthy dish, even though prepared with very few ingredients.   1. To prepare Rice Pudding (Riso al Latte), start by bringing the milk to a boil in a non-stick pan. Add a pinch of salt and ground cinnamon to taste, then stir to combine.
  2. Gradually add the rice while continuously stirring with a wooden spoon to prevent it from sticking to the bottom. Continue cooking for about 15 minutes or until the rice is perfectly cooked.
  3. When the rice is almost ready, add the sugar and stir to incorporate it with the other ingredients. Once the rice is fully cooked, turn off the heat.
