To prepare Pork Loin with Apples first tie with a string the Pork Loin.
Once tied, season with salt and pepper and brown the loin well on all sides in a saucepan with a little olive oil, a knob of butter, the garlic cloves, sage leaves and rosemary sprigs.
Smoke with the white wine and marsala, let the alcohol part evaporate and transfer to the oven and bake at 360°F (180°C) for about 1 hour and 30 minutes or at least until the meat is well cooked. While cooking, turn the arista thoroughly and add some broth as needed.
