  1. To prepare Pan-Seared Radicchio, take the radicchio head and separate the leaves, then cut them lengthwise into strips about half a centimeter wide. Wash thoroughly and let soak in cold water for 30 minutes.

  2. Meanwhile, finely chop the spring onion and sauté it in a saucepan with a drizzle of extra virgin olive oil. When the spring onion is slightly browned, add the drained radicchio and season with salt.

  3. Separately, toast the pine nuts and raisins in a small pan for a few minutes, making sure the pine nuts don’t overlap each other to ensure even heating. When the radicchio has softened, add the toasted pine nuts and raisins, adjust salt if needed, and cook for another 5 minutes over medium heat, stirring to combine all ingredients. Remove the Pan-Seared Radicchio from the heat and serve while still hot!

Alternatives

If desired, you can deglaze the Sautéed Radicchio with Red Wine for a more intense flavor, or add Balsamic Vinegar during cooking to prepare a sweet and sour version. You can also prepare the Sautéed Radicchio by adding Black Olives and grated Parmigiano-Reggiano cheese at the end of cooking instead of raisins. Alternatively, you can substitute Pine Nuts with Walnuts!

Tips

To thoroughly clean the Radicchio, you can use half a teaspoon of Baking Soda or a teaspoon of White Wine Vinegar. We recommend using Treviso Red Radicchio (a long-leafed Italian chicory) or the round Red Radicchio variety.

Storage

You can store the Sautéed Radicchio in an airtight container in the refrigerator for one day. Since this Sautéed Radicchio is so quick to prepare, we don’t recommend freezing it.
