Remove the stem, seeds, and internal membranes from the bell peppers and cut them into chunks roughly the same size as the zucchini slices.Cut the seitan into medium-sized pieces and begin assembling the skewers by alternating the different ingredients.Separately, finely chop the rosemary with the garlic and mix with two tablespoons of olive oil.Heat a cast-iron grill pan and place your skewers on it.
