To prepare Skillet Chicken and Mushrooms, start by putting a saucepan on the stove with a drizzle of extra virgin olive oil, the clove of garlic, rosemary, and sage and sauté for a few seconds.
Place the chicken drumsticks in the casserole dish, season with salt, pepper and some chili flakes and brown carefully on all sides. Deglaze with the white wine and once the alcohol part has evaporated add the mushrooms, stir well, cover with the lid and cook for a few minutes until the mushrooms are somewhat tender.
Now add a generous spoonful of tomato paste dissolved in a little lukewarm water, stir everything well and continue cooking with the lid on until the chicken is well cooked.
Once cooked, season with salt and pepper if necessary, turn up the heat for a few moments to let “the sauce shrink” a bit. Sprinkle with a generous handful of chopped fresh parsley and here is your Chicken with Mushrooms ready to be served hot!
