Note: Dover sole (Solea solea) is commonly used in Italy. If unavailable, you can substitute with other flatfish like flounder or plaice, which have similar texture and mild flavor.

  1. To prepare Sole with Potatoes, start by peeling the new potatoes and boiling them in plenty of salted water until they are cooked but still firm; once ready, set them aside. Meanwhile, take the sole, remove the bones and clean the outer part thoroughly, gut it and rinse under running water. In a pan, sauté the garlic with a drizzle of olive oil and, when it turns golden, add the fish.

  2. Pour in about two tablespoons of lukewarm water, season with salt and pepper to taste, and cook for about ten minutes. When you’re almost done with the preparation, add the new potatoes along with chopped parsley and thyme, complete the cooking process and serve the Sole with Potatoes while still hot on serving plates.

Alternatives

You can use regular potatoes instead of new potatoes: after boiling them, simply slice them not too thick and continue as described in today’s recipe.
