Dalgona or Ppopgi are Korean Cookies made with Sugar and Baking Soda that became famous thanks to the Netflix series Squid Game. While in the series they represent a challenge to be overcome with patience and speed, in everyday life they are a fun activity for the whole family. The distinctive feature of Dalgona, now known as Squid Game Cookies, lies in how they should be eaten.

The caramel-like mixture used for their preparation is stamped with a mold to create a shape. To eat them, you must remove all the excess without breaking the imprinted design. The Original Korean Dalgona or Ppopgi Recipe is so popular that many street food vendors offer them. There’s also a tradition of rewarding skilled eaters with either another cookie or a small prize. The term Ppopgi actually refers to the chance of winning a prize for your skill.

Dalgona, which roughly translates to “it’s sweet,” might sound familiar from Dalgona Coffee, the upside-down cappuccino also Made in Korea.   1. To prepare the original Korean Dalgona candy, pour the sugar into a metal ladle and carefully melt it over medium-low heat, stirring with a bamboo stick (like those provided in Chinese restaurants). It’s crucial not to burn the caramel, so carefully adjust the heat intensity and, if necessary, remove and return the ladle to the flame.

  2. Once the sugar has completely melted, add the baking soda. You’ll immediately notice foam forming and the mixture turning amber in color. Stir the mixture about 20-25 times.

  3. While still hot, transfer the mixture onto a sheet of parchment paper. Let it cool for just a few seconds, then cover it with another sheet of parchment paper and press down with the bottom of a glass or small pan to create a wafer about 2-3 mm thick.

  4. While still warm, choose your preferred cookie cutter and press it into the caramel wafer. Let it cool for a few minutes, then, using a needle (just like in Squid Game), carefully try to remove your Dalgona candy from the mold.

You can make Dalgona cookies with either granulated or brown sugar. Using brown sugar will give them a more intense caramel flavor note and a slightly darker color.
