Traditionally, these Pan-Cooked Lentils accompany Cotechino (Italian cooked pork sausage) and Salame Cotto (cooked salami), and according to tradition, eating them on New Year’s Eve brings good luck and prosperity for the coming year!

The Stewed Lentils Recipe is incredibly simple yet captivating in its simplicity: these Vegetarian Stewed Lentils can be served alongside any meat dish or paired with vegetarian mains. Furthermore, these Tomato Lentils can be enjoyed as a main course or used as a sauce. To prepare Perfect Stewed Lentils, you can choose between dried lentils to make Stewed Dried Lentils, fresh lentils for Stewed Fresh Lentils, or canned lentils.

Whichever option you choose, you’ll achieve excellent results by adjusting the recipe according to the type of lentils you select. If using dried lentils, remember to soak them in cold water for at least 2 hours before cooking.

  1. To prepare Stewed Lentils, wash and clean the onion, celery, and carrot, then finely chop them and cook in a non-stick pan with a drizzle of olive oil and a clove of garlic. While the soffritto (aromatic base) is cooking, drain the lentils from their soaking water and rinse them thoroughly.

  2. Add the lentils to the soffritto, then add the aromatic herbs, tomato paste, salt, and pepper, and mix well. Pour in some white wine, let it evaporate, and begin cooking on low heat, adding half a glass of water.

  3. Monitor the cooking process and add more water if needed, cooking for 20-30 minutes. Once cooked, adjust the seasoning with salt and pepper to taste, and serve hot.

Alternatives

To make these Stewed Lentils even more flavorful, you can add 50 grams (about 2 oz) of pancetta or Italian sausage. You can also transform this dish into a delicious Lentil Sauce for pasta by simply adding some tomato passata (strained tomatoes).

Tips

For this Stewed Lentils recipe, we used canned lentils, but you can also use fresh or dried lentils. If using dried lentils, simply soak them in cold water for a few hours, then drain and rinse them well. This is a classic Italian comfort dish that’s both nutritious and easy to prepare.

Storage
