To prepare the strawberry salami, start by washing and cutting the strawberries into pieces. Put the strawberries in a pot with the sugar and cook over medium heat for about 15 minutes, stirring occasionally, until the strawberries have softened and released their juice.
After the cooking time and when they are ready, remove the strawberries from the heat and let them cool completely.
In a large bowl, mix the mascarpone with the strawberries until you get a homogeneous mixture.
Add the white chocolate chips and mix well.
Roughly crumble the dry biscuits (but not too much, leave some whole pieces), add them to the mixture, mixing well to distribute the ingredients evenly.
Transfer the mixture onto a sheet of baking paper and shape it into a salami shape. Wrap the salami in the baking paper, closing the ends like a candy and securing everything with string, to simulate a real salami.
Put the salami in the freezer for at least 4 hours, or until it is well solidified. Remove the salami from the freezer about 20 minutes before serving, to allow it to soften slightly.
