To prepare the Stuffed Peaches, start by carefully washing the peaches under running water, cut them in half, remove the stones, and with the help of a teaspoon, extract some pulp.
Put the collected peach pulp in a bowl, add some crumbled amaretti, coarsely chopped almonds, and a sprinkle of bitter cocoa powder.
With the help of a fork, mix the ingredients well, slightly mashing the pulp until a well-blended mixture is obtained. Now place an overturned amaretto in the center of each peach.
Now put some of the filling made with peaches, amaretti, almonds, and bitter cocoa on each peach. Then sprinkle with some cane sugar, a few crumbled amaretti, and bake in a preheated oven at 180°C (160° if fan-assisted) for 30-40 minutes.
Once ready, remove the peaches from the oven and let them cool to room temperature. Then serve the Syruped Peaches, optionally accompanied by a nice scoop of vanilla or cream ice cream.
