The Bellini Cocktail is one of the most famous and beloved Italian cocktails worldwide, thanks to its unique blend of flavors that come together to create this typically summer drink with an unmistakable taste.

The Bellini Recipe was invented by Giuseppe Cipriani in 1948 while he was head bartender at Harry’s Bar in Venice. He named this innovative cocktail after the Venetian painter because its pinkish color reminded him of the toga worn by an angel in a painting by Giovanni Bellini. To prepare the authentic Bellini Cocktail following the Original Recipe, you must first use a specific type of peach, the Bianca Veronese (White Peach from Verona – if unavailable, use any ripe white peach), Prosecco DOC, and importantly, the peaches should be crushed, never blended.

Crushing the peaches through a fine-mesh strainer will allow you to obtain pure Peach Nectar, free from the typical fibers and pulp of the fruit. This method extracts the essence, aromas, and taste of this summer fruit which, when combined with Prosecco, creates a cocktail with a distinctive flavor.

  1. To prepare the Bellini Cocktail, carefully wash the white peaches, peel them and slice them.

  2. Place the peach slices in a strainer and carefully mash them to obtain a juicy but well-filtered puree.

  3. Pour 10 cl of the filtered peach puree into a champagne flute, add well-chilled Prosecco, and slowly stir with a teaspoon to blend the flavors without losing too much of the bubbles.

  4. Serve your Bellini Cocktail immediately, garnished with a fresh peach slice if desired.

Alternatives

To make the Bellini Cocktail, you can substitute Prosecco with Franciacorta (Italian sparkling wine) or Champagne. Each will give a slightly different but equally elegant result.

Tips

For a perfect Bellini, it’s crucial that the peaches are not blended but crushed and carefully strained through a sieve. Another essential point is that the Prosecco must be very cold. This classic Venetian cocktail, invented at Harry’s Bar in Venice, requires attention to detail for the best results.
