Using a knife, make a light incision along all edges about 2 cm (0.8 inches) from the border and prick the inner area with a fork. Cut the cherry tomatoes in half, place them in a bowl with some olive oil, salt, pepper, and a few roughly chopped basil leaves, then mix well.

  2. In a bowl, combine the ricotta cheese with some grated Parmigiano Reggiano (aged Italian parmesan cheese) and a pinch of salt. Use a fork to mix and soften the mixture until smooth.
