Instructions

  1. To prepare Valentine’s Day Cookies, start by pouring the flour onto your work surface. Add the softened butter, vanilla bean seeds, baking powder, sugar, lemon zest, and egg in the center. Work all ingredients together until you obtain a homogeneous dough, then cover it with plastic wrap and let it rest for at least half an hour.

  2. After the resting time, roll out the dough to about half a centimeter thickness. Using a heart-shaped cookie cutter, cut out an even number of shapes. Then, using another heart-shaped cutter of smaller size, make cutouts in half of the cookies. Transfer the hearts onto a baking sheet lined with parchment paper and bake at 180°C (350°F) for about 20 minutes.

  3. The cookies are ready when they turn golden brown. Spread strawberry jam on the solid heart cookies and place the cut-out hearts on top to create sandwich cookies. Dust generously with powdered sugar, transfer to a serving plate or tray, and serve these Valentine’s Day Cookies to your loved one.

Alternatives

You can fill your Valentine’s Day Cookies with any jam of your choice: given the romantic occasion, we suggest using red-colored jams such as strawberry or cherry for a festive touch.

Storage

You can store these Valentine’s Day Cookies in an airtight container for up to three days, although we recommend eating them fresh to best enjoy their taste and texture.
