To prepare these Fritters without Milk or Eggs, you only need a few ingredients, the classic ones used in baking: Flour, Sugar, and Yeast, plus Soy Milk and Tofu to replace the missing ingredients. For flavoring, we stick to the classics with Rum and Lemon Zest.   1. To prepare the Vegan Carnival Fritters, start by soaking the raisins in lukewarm water for at least 15 minutes.
  2. Meanwhile, transfer the tofu into an immersion blender container and blend it with 50 ml of milk until you obtain a smooth cream.
  3. Separately, combine flour, sugar, yeast, lemon zest, and salt in a bowl. Add the tofu cream, remaining milk, and rum, then mix quickly to obtain a smooth batter without lumps.
  4. Squeeze the raisins with your hands to remove excess water, add them to the batter, and give a final quick stir.
  5. In a heavy-bottomed saucepan, heat the vegetable oil to 170°C (338°F) – you can verify the temperature using a kitchen thermometer.
  6. Using two spoons, drop spoonfuls of batter into the oil, being careful not to overcrowd the surface. Fry the Vegan Carnival Fritters for a few minutes until they are well puffed and golden brown on the surface.

Variations and Alternatives

You can substitute the raisins with finely diced apple pieces. Chocolate chips are not recommended for this recipe.
