  1. To prepare the Vegetarian Cabbage Rolls, first cook the rice according to package instructions, then drain and let it cool. Meanwhile, wash the cabbage leaves and blanch them in boiling water for a couple of minutes, then drain and place them on a clean kitchen towel to dry.
  2. Prepare the filling by combining the cooled rice, egg, ricotta cheese, and Parmigiano Reggiano in a bowl, then season with salt and pepper. Fill the cabbage leaves with the mixture, folding the sides inward and rolling them up to form the rolls. Secure each roll with a toothpick.
  3. In a pan, prepare a soffritto by finely chopping and sautéing the onion, then brown the cabbage rolls. Add the tomato passata and season with salt. Cover and cook over low heat for about 30 minutes, adding a splash of water if the sauce becomes too dry.
