  1. To prepare the Zucchini Flan, start by washing the zucchini, removing their ends and grating them using a coarse grater.
  2. Separately, in a bowl, break the eggs and beat them with milk and oil, using a kitchen whisk.
  3. Then add the grated Parmesan cheese, flour, and baking powder. Finally, season with a pinch of salt, a touch of pepper, and some freshly grated nutmeg.
  4. Lastly, add the grated zucchini and the diced mozzarella, giving everything a quick stir.
  5. Transfer the mixture into a 22 cm (9-inch) diameter baking pan lined with parchment paper and bake at 180°C (350°F) for 40 minutes.
